We always have some kind of noise between songs (singer talking, feedback, delay pedal, etc) to keep up the intensity and not bore people. There's nothing worse than having the entire venue silent...

We change our set on the fly. We have about 10 originals and usually only time to play 6 or 7 of them (some songs are pushing the 6 minute mark) so sometimes we'll edit the set to suit the audience....
